This Park Lane Hotel restaurant serves a variety of international dishes, most of which have a decidedly French lilt. The shellfish soup, for example, is served with vegetables prepared in a wok, and Tasmanian lamb chops are prepared with spinach. TSIM SHA TSUI. This opulent French restaurant is located in the Grand Stanford Hotel. The restaurant offers a fairly comfortable, yet sophisticated adult environment, including a little light piano music. The menu features some of the more popular Continental dishes, including escargots, rack of lamb, and veal. The dinner specials change seasonally, and specials may not be necessarily be French. ADMIRALTY. This classy French restaurant, located at Pacific Place, has an awesome view of downtown Hong Kong. Most of the ingredients are imported from France, and the dishes are well portioned with some of the finest French food you can imagine. Of course, the best part of the meal is the dessert buffet, which is impossible to pass up. Reservations are required. METRO: Admiralty.

LAN KWAI FONG. Café des Artistes boasts a true French chef who specializes in dishes from his native Province. The roasted duck is excellent, as are the veal dishes. Furthermore, catching sight of the tempting dessert cart at Café Des Artistes is the highlight of any day. The dining area has several large windows that, when opened, offer some rather interesting views of action in Lan Kwai Fong. Reservations are needed. METRO: Central.

CENTRAL. The well-regarded Caprice is lovely, with tastefully opulent décor and a wonderful view over Victoria Harbour. Chef Vincent Thierry's forte is contemporary French cuisine and he imports a plethora of special ingredients to accomplish the best flavors and textures. The menu changes frequently, but expect to find dishes such as Artichoke Cappuccino with Périgord Black Truffle, Pan-Sautéed Veal Chop with Green Asparagus and Jus of Black Truffle, and Roast Chicken with Fondant Potatoes.
